Red Velvet Cupcakes

I’ve never eaten a red velvet cupcake before. I guess the whole, is it a vanilla or chocolate cake or just something in between steered me away from even attempting this cake. If it wasn’t for my brother who begged me to make these cupcakes for his friend, I don’t think I would ever make these. I chose a butter based instead of oil recipe for maximum flavour because I just couldn’t see how a cake made with one tbsp of cocoa would have any taste. Red velvet isn’t supposed to be a chocolate tasting cake, but the thought of a something tasting like it had a ‘hint’ of chocolate flavour didn’t seem appealing to me. Plus with the tanginess from the buttermilk and vinegar, I was really worried these would have some weird flavour and that the only thing drawing me into eating these was the pretty red colour and cream cheese frosting!

As it turns out, these weren’t so bad. They were even moist the next day even after storing them in the fridge, which was great because most butter based cakes dry out. I used the recipe from the Joy of Baking, increasing the butter by 2 tablespoons.

Red Velvet Cupcakes:

1 1/4 cups (125 grams) sifted cake flour
1/4 teaspoon salt
1 tablespoons (10 grams) regular or Dutch-processed cocoa powder
1/4 cup (57 grams) unsalted butter, at room temperature (I used 6 tablespoons)
3/4 cups (150 grams) granulated white sugar
1 large egg
1/2 teaspoon pure vanilla extract
1/2 cup (120 ml) buttermilk
1 tablespoon liquid red food coloring
1/2 teaspoon white distilled vinegar
1/2 teaspoon baking soda

Preheat oven to 350 degrees F (175 degrees C) and line 12 muffin tins with paper cupcake liners.

In a large bowl sift together the flour, salt, and cocoa powder.

In the bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the egg and beat until incorporated. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined.

In a measuring cup whisk the buttermilk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and buttermilk to the butter mixture, in three additions, beginning and ending with the flour.

In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.

Working quickly, divide the batter evenly among the 12 muffin cups and smooth the tops with an offset spatula or the back of a spoon. Bake in the preheated oven for approximately 18 – 23 minutes, or until a toothpick inserted in the center of the cupcakes comes out clean.

Cool the cakes in their pans on a wire rack for 10 minutes and them remove from pan. Let cool completely before frosting. Either spread the frosting with a knife or offset spatula, or use a large 1M Wilton open star decorating tip to pipe the frosting.

Cream Cheese Frosting
6 tablespoons of butter at room temperature
8 oz cream cheese at room temperature
1.5-2 cups of icing sugar, sifted depending on how sweet you like your frosting

Cream butter at medium speed until smooth
Add cream cheese and continue beating at medium low speed until there are no lumps
Sift icing sugar and continue beating at medium low until incorporated
Do not overbeat or else frosting will be too soft to pipe

I could only take this picture at night when the lighting is all screwed up, but this is what the red velvet cupcakes were really made for.

Am 17. Juli vermeldete der FC Bayern München die Abgänge dreier Leistungsträger, die gemeinsam für 27,9 Punkte, 9.4 Rebounds und 7,6 Assists im Schnitt verantwortlich waren.  

“Alle drei haben extrem gute finanzielle Angebote von außen erhalten”, erklärte Geschäftsführer Marko Pesic bei SPORT1: “Wir kämpfen eben auf einem Markt, auf dem wir finanziell nicht mithalten können.”

Durchaus ein schwerer Schlag für den Deutschen Meister von 2018 und 2019. Doch im Hintergrund arbeiteten die Verantwortlichen um Geschäftsführer Marko Pesic und Sportdirektor Daniele Baiesi bereits an zwei Transfer-Coups.

Huestis und Monroe bringen FC Bayern NBA-Erfahrung

Nach Flügelspieler Josh Huestis, der 76 Spiele für die Oklahoma City Thunder absolviert hat, kam mit Greg Monroe ein echtes NBA-Schwergewicht.

632 Mal lief “Moose” für die Detroit Pistons, Milwaukee Bucks, Phoenix Suns, Boston Celtics, Toronto Raptors und zuletzt Philadelphia 76ers auf.

Viele Gespräche mit dem Center und dessen Berater sorgten dafür, dass aus einer “unrealistischen Idee” tatsächlich ein Transfer wurde, der Bookers Abgang (Pesic: “Das hat mich schon überrascht”) mehr als auffangen sollte.

“Er passt wie die Faust aufs Auge, weil er eine Dominanz unter den Brettern und eine Qualität unter dem Korb hat, etwa mit seinem Rebounding, die kaum jemand in Europa besitzt”, sagte Pesic.

Dank der Neuverpflichtungen, zu denen auch Guard T.J. Bray von Rasta Vechta – der beste Passgeber der vergangenen BBL-Saison – gehört, und der Vertragsverlängerungen von Star-Forward Vladimir Lucic und Finals-MVP Nihad Djedovic, macht Bayerns Kader durchaus wieder Mut für einen Angriff in Europa.

Und noch sind die Planungen nicht abgeschlossen.

Pesic kündigt weitere Transfers an

“Das, was wir geplant haben, setzen wir konsequent um. Wir werden sicherlich noch zwei Spieler holen”, kündigte Pesic an. Spieler, “die uns auf und abseits des Feldes weiterbringen”, wie Pesic sagt.

Bei diesem Prozess werde man sich aber, wie auch bei Huestis und Monroe, Zeit lassen. “Wir sind voll im Soll”, sagte Pesic, der mit Baiesi noch einen Guard und einen Big Man sucht. 

Von genauen Zielsetzungen sieht man in München bislang zwar ab, doch “wir versuchen, besser zu sein als in der vergangenen Saison”.

Das umfasst mehr als den sportlichen Bereich. Man wolle sich im Verein “sehr gut aufstellen”, auch “in der Logistik, in den Strukturen, die von Nöten sind, um die Wettbewerbe wie Bundesliga und EuroLeague zu stemmen.”

Während man in der BBL ohne Playoff-Niederlage den Titel holte, scheiterte man in der EuroLeague knapp an den Playoffs. Am 3. Oktober steigt der Auftakt gegen Armani Mailand.

Hoeneß weg? “Wir werden vorbereitet sein”

Doch auch Pesic weiß: “Es war nicht alles gut. Ab Mitte Februar sind wir in unseren Leistungen sehr inkonstant gewesen. Wir haben in der Bundesliga zwar fast alles gewonnen, waren aber nicht durchgehend auf unserem Topniveau. Das analysieren wir.”

In der EuroLeague gilt es, die Auswärtsschwäche abzulegen. “Dann haben wir gute Chancen”, sagte Pesic.

Gleichzeitig werde man “die Bundesliga genauso ernst nehmen, wie es in den vergangenen Jahren der Fall war.” Eine Vormachtstellung droht mehr denn je.

In der Vorbereitung geht man neue Schritte. Erstmals reisen die Münchner in die USA und anschließend nach Uruguay, Pesic spricht von einem “Meilenstein der Internationalisierung und Markenbildung unseres Vereins” und einer “sportlich aufregenden Herausforderung”.

Die Bayern machen sich auch im Basketball international einen Namen, ein möglicher Rückzug Uli Hoeneß’ als Präsident soll daran nichts ändern.

“Wir werden vorbereitet sein, was auch immer anstehen wird, weil wir eigenständig arbeiten und uns trotzdem eng mit ihm austauschen”, meinte Pesic: “Er wird im Blick haben, dass es uns gut geht und wir auf dem richtigen Weg bleiben. Da bin ich mir sicher.”

Next Tuesday, 1 December, is World AIDS Day. It’s estimated that across the world, 34 million people are currently living with HIV and more than that have died from AIDS and associated conditions since the first cases were reported in the early 1980’s.

Research has shown that public awareness of HIV has declined over the past decade. The myths that I remember being debunked when I was growing up in the 1990’s – that you can catch HIV from kissing, that most people catch HIV through drug use – are now widely believed. If recent events have shown us nothing else, there’s a world of misinformation and scaremongering and prejudice out there.

This year, the National AIDS Trust is trying to challenge some of the commonly held preconceptions about HIV/AIDS through the medium of cake with their #SpreadingIcingNotIgnorance campaign as part of their broader #RethinkHIV campaign to mark World AIDS Day.

When I was growing up, HIV was a death sentence (and still is for many people, particularly in the developing world) but advances in treatment mean that, with the right medication, many people with HIV will have a normal life expectancy. A study in France even found that people with HIV tended to live longer than average as they tended to take better care of their health. Effective treatment has also meant that 85% people in the UK with HIV are not infectious as medication has suppressed the virus in their system (as is, apparently, the case with Charlie Sheen).

The red ribbon has become an iconic symbol of the battle against HIV. I’m the first to admit that skills with fondant are pretty lacking but I managed to knock out a few for such a good cause. My red ribbons are sitting on top of a surprisingly delicious red velvet beetroot cupcake (and a mound of cream cheese frosting).

I say surprisingly delicious because I’ve never really seen the point of either red velvet cake or adding beetroot to cakes. This recipe has, however, converted me. The earthiness of the beetroot and the bitterness of the cocoa work together perfectly without either one overwhelming. I often find that beetroot cakes can be dense affairs but these little cakes are as light and fluffy as you could want whilst still being sturdy enough to take a good dollop of cream cheese frosting (which is always a quality I admire in a cake).

Yield: 10 – 12 cupcakes

I’ve never really seen the point of red velvet cake or adding beetroot to cakes until I tried this recipe from the New York Times. The texture is spot on and the cocoa/beetroot combo is subtle without being overpowering. Note that I only get 10 cakes out of this but I used very large cases so you might well get a few more.

Ingredients

    For the cupcakes:
  • 2 medium beetroot
  • 120ml (1/2 cup) buttermilk
  • Juice of 1/2 lemon
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 120g (1 cup) rice flour
  • 2 1/2 tablespoons corn flour / corn starch
  • 2 tablespoons cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 115g (1 stick) unsalted butter, softened
  • 200g (1 cup less 2 tablespoons) unrefined caster sugar
  • 2 eggs, lightly beaten
  • For the frosting:
  • 55g (1/2 stick) unsalted butter, at room temperature
  • 300g (2 1/2 cups) icing sugar / powdered sugar
  • 125g (1/2 cup) cream cheese, cold
  • Red fondant icing, for decoration (totally optional)

Instructions

  1. The first step is to prep your beetroot by wrapping it in foil and roasting it in the oven for a 1 1/2 – 2 hours until soft. I tend to do this the night before so it’s totally cold by the time I’m ready to bake. When you are ready to go, preheat the oven to 180C/350F and line a baking tray with paper cases.
  2. When the beetroot has cooled, peel it and roughly chop the flesh. Add it to a food processor and pulse a few times to check that you only have about 2/3 cup of beetroot; if your beetroot was a bit bigger, remove some of the excess. Add the buttermilk, lemon juice, vinegar and vanilla and blitz again until you have a smooth (and very pink!) puree.
  3. In a large bowl, lightly whisk together the flours, cocoa powder, baking powder, bicarbonate of soda and salt and set aside.
  4. In another bowl, whisk together the butter and sugar until light and fluffy. Gradually add the eggs, beating after each addition until the mixture is smooth. Fold in 1/3 of the dry ingredients, then half of the beetroot mixture, then another 1/3 of dry ingredients, then the rest of the beetroot and finally the rest of the dry ingredients.
  5. Divide the mixture between the paper cases and bake for 20 – 25 minutes until the cakes are risen and cooked through. Remove from the oven and allow to cool completely.
  6. To make the frosting, beat together the butter and icing sugar until smooth and light. Add the cold cream cheese and beat until it’s totally incorporated and the mixture is fluffy. Dollop this on top of the cupcakes and top with whatever you fancy. I made the iconic red ribbon out of red fondant icing for these.

Raspberry Peach Cobbler

Peach cobbler is a popular southern dessert. My Raspberry Peach Cobbler is loaded with sweet peaches and tart raspberries then topped with a sweet, buttery cake-like topping. 

My husband’s not a big fan of biscuit type toppings on cobblers. So I searched for a recipe that had a more cake-like top I could pair with my sweet peaches.
