San Miguel ends slide, clobbers Blackwater

MANILA, Philippines—San Miguel got out of its slump and flexed its championship muscle on Blackwater, 93-79, in the PBA Philippine Cup Wednesday at Mall of Asia Arena.

The Beermen, who are gunning for a fifth straight Philippine Cup, snapped their two-game skid to get to a 3-3 record and jump from eighth all the way to a share of the fourth spot with TNT.

Things were still neck-and-neck in the early parts of the third quarter with both teams trying to wrestle control from a 50-50 tie.

That was when the defending champions kicked it to high gear with quick 8-0 run that Terrence Romeo capped off with a three-point play to give the Beermen a 58-50 lead halfway through the third period.

My New Breville Oven & an Exciting New Technique for Melting Chocolate

It’s been over five years since I wrote about my first Breville oven, calling it the perfectly even oven. My test was to pipe a spiral of cream puff pastry to see how it browned and it was perfectly even.

I have been so enamored of this oven, I have since purchased one as a wedding gift and another to have in my weekend home.

A few weeks ago, I discovered the latest model, the Smart Oven Air. When I learned about the extra features this newer slightly larger model offers I had to have it. And I’m totally smitten! I’ve even put it to use for a newly developed terrific technique, which I will share at the end of this posting. First: here are the new features that I most value:

  • An oven light that can be turned off or on at will (oh joy!)
  • Two oven racks
  • A dehydrating setting and mesh basket (I’ll be using this for my citrus powder)
  • A proofing setting for bread dough between 80°F/27°C and 100°F°/38°C

(I tested it and it holds true to temperature with no more than 3°F fluctuation.)

Now here is my great new discovery: Anyone who has ever tried to melt white or milk chocolate without stirring it constantly, has learned the hard way that it will seed. This is caused by the milk solids in the chocolate. And there is no way of restoring the little specks of hardened milk solids. But, if you heat the chocolate at 100°F/38°C it will melt gradually to be as smooth as silk. In short, you can place it in a container in the Breville, turn it to the proofing setting, set the temperature to 100°F/38°C, and leave it to melt on its own.

Zielone szparagi, dwa sery – cheddar i kozi, trochę rukoli i fasolki szparagowej i to wszystko na kruchym, maślanym i również serowym cieście. Za takimi daniami tęskni się cały rok 🙂 Cieniutkie, zielone szparagi lubię najbardziej – nie wymagają specjalnej obróbki, jedynie chwilkę blanszowania we wrzątku (można je jeść nawet na surowo), rzadko bywają łykowate.

Dużo bardziej mi po drodze z zielonymi niż z białymi szparagami, które moim zdaniem potrzebują ręki profesjonalisty. Poza tym zielone szparagi pięknie komponują się wizualnie i smakowo z innymi zielonymi warzywami sezonowymi – zamiast fasolki szparagowej można dodać świeży, zielony groszek, a zamiast rukoli, np. liście czosnku niedźwiedziego. Sery w tej tarcie są pyszną kropką nad i 🙂

Tarta ze szparagami i dwoma serami:

ciasto –
1,5 szklanki (185 g) mąki,
100 g zimnego masła,
1 jajko,
15 g startego sera cheddar (lub innego twardego, dojrzałego sera np. parmezanu),
2 łyżki zimnej wody,
pół łyżeczki soli

nadzienie –
200 g młodych, zielonych szparagów,
50 g fasolki szparagowej lub zielonego groszku,
2 jajka,
80 g gęstej śmietany 18%,
100 g śmietanki kremówki 30%,
2 garście rukoli,
15 g startego sera cheddar,
1 miękki serek kozi,
1/2 łyżeczki startej gałki muszkatołowej,
sól i pieprz

Masło i mąkę z solą posiekać z jajkiem i zimną wodą. Szybko zagnieść na gładkie ciasto i uformować kulę. Ciasto rozwałkować na kształt prostokąta. Połowę rozwałkowanego ciasta posypać startym serem i przykryć drugą połową. Jeszcze raz rozwałkować i wykleić ciastem formę do tarty (o średnicy ok.23 cm) i dokładnie docisnąć do dna i boków. Ciasto na dnie formy ponakłuwać widelcem i schłodzić w lodówce. Spód piec około 15 minut w piekarniku rozgrzanym do 210 stopni aż będzie złocisty. Wyjąć z pieca i obniżyć temperaturę piekarnika do 180 stopni.

W czasie kiedy będzie się piekł spód, zblanszować szparagi, gotując ok. 3 minuty, a później w tej samej wodzie podobnie zblanszować fasolkę szparagową lub groszek.

Jajka rozbić w misce i wymieszać ze śmietanami i startym cheddarem i połową porwanego na małe kawałki sera koziego. Przyprawić gałką muszkatołową, solą i pieprzem.

Na podpieczony spód ułożyć fasolkę lub groszek i garść rukoli. Zalać to mieszaniną jajeczno-serową. Na wierzchu ułożyć szparagi  i pozostały kozi ser. Tartę włożyć z powrotem do pieca i zapiekać 25-30 minut, aż nadzienie zetnie się, a ser zarumieni.

Upieczoną tartę posypać pozostałą rukolą.

Healthy Gingerbread Oatmeal Scones

My childhood Christmases followed a fairly similar routine. Each year, as soon as we awoke, my brother and I sprinted into the family room to peek into our stockings and unwrap gifts. My parents and grandparents joined in, each with a piping hot beverage in hand, and we stayed circled around the tree on the sofa and soft carpet until all of the wrapping paper and bows lay discarded in a giant bag to recycle later.

Only then did we begin to think about a “real” breakfast… Not just bits of toast and chocolate candies fished out from the toes of Santa’s stockings!

It often involved fluffy scrambled eggs and crispy strips of bacon, but occasionally, my grandma pulled out flour, sugar, and mixing bowls to bake her special breakfast pastry. She carefully made the dough, rolled it out into a thin rectangle, and sliced sections into thin strips. After spooning jam down the center, she painstakingly twisted those strips across the top and tucked them into the edges to form a plait. Once satisfied, she slipped the pan into the oven, and we waited for the timer to ring.

Rather impatiently, I’m afraid… Little kids with rumbly tummies can only be distracted by brand new Christmas gifts for so long, especially with the smell of buttery dough in the air!

As soon as the jam cooled enough to avoid burning our tongues, Grandma and Mom cut slices of the pastry and slid them onto plates. The flaky layers melted in our mouths, and we almost always requested seconds… And the adults did too!

Between mugs of coffee, cups of tea, and a small nibble whenever we walked through the kitchen, that pastry rarely lasted past midafternoon, and it was always worth the wait — even if our loudly growling stomachs didn’t seem to think so while we watched the oven like vultures or hawks.

Remembering how long that holiday breakfast treat took to prepare, I thought these healthy gingerbread oatmeal scones would be a delicious alternative this year! They’re just as satisfying and festive, and they’re still perfect for pairing with coffee, tea, or even hot chocolate.

In comparison, these scones are also much faster and easier to make… Which is always a huge plus during the busy holiday season!
